We are all aware that vegetables are good for us to thrive yet we often fail to consume enough of them. Some of the hurdles we experience are that the veggies are too time consuming to prep, they look weird, the taste is too bland, or we don’t know how to cook them in any other way then what we already know.
Well, no more excuses, we can overcome them!
Let us begin this year by making a very basic but beneficial change and that is eating veggies at each meal. Now I know that is do-able, right?
Why eat vegetables?
Vegetables help us feel healthy, nourished, and vibrant! They add color and variety to our meals.
Studies show that those who eat more veggies as part of an overall healthy diet are more likely to have a reduced risk of some chronic diseases. Yay for a healthy body and happy mind!
There are countless benefits of eating vegetables, here is a reminder of few:
- Naturally low in calories and high in fiber, which keeps us full while helping us to manage our weight.
- Vegetables have a high water content, which helps our body stay hydrated and also flush out toxins from the body.
- They lower the risk of heart disease and diabetes
- Improve immune function
- Enhance hormone health
- Protect the stomach and digestive tract from diseases like cancer
- Improve eye health
- Support healthy skin, hair and nails
- They are full of phytonutrients, antioxidants, vitamins, minerals, and fiber that are important for the functioning and maintenance of our body.

I understand just how hard it can be to lead a healthy lifestyle especially with everyone being at home these days. But this is the best time to get started and focus more on our health during these tough times. And it all starts with eating foods that nourish us!
I created the 5- Day Veggie Challenge with a goal to incorporate at least 1 serving of vegetables into EVERY meal: breakfast, lunch and dinner for 5 days!
So What Is The Veggie Challenge About?
The goal of this 5- Day Veggie Challenge is to encourage each other and establish the good habit of incorporating vegetables back in our diet.
It’s amazing how this simple change can bring such noticeable improvements in our health and well-being.
Don’t worry, you don’t have to follow any particular way of eating or become a vegetarian.
You don’t even have to strictly follow the meal plan provided. All you have to do is add vegetables to each meal for 5 days.
Easy peasy!
You are welcome to incorporate your own recipes however, to make it easier I have included a 5 day sample meal plan to follow along, complete with recipes and a grocery shopping list.
You will also receive daily emails from me (your nutritionist) to motivate and remind you of your goals.
And to make it fun and interactive, you can also participate in our private Facebook group where you can ask questions, help and encourage others, and share your wins and experiences along the way.
