Blueberry Chia Pudding

I am sure you have tried chia seeds by now. But in case you haven’t, let me introduce these tiny black seeds to you. Grown natively in Mexico, where the seeds mean “strength”, they are high in omega 3-fatty acids, fiber, protein, antioxidants, calcium, and other vitamins and minerals.

Chia seeds are so versatile and can be used in smoothies, salads, energy balls/bars, homemade crackers, muffins, oatmeal, granola, and also as an egg substitute.

This is my husband’s daily breakfast/suhoor (the pre-dawn meal) in Ramadan (the holy month of fasting in Islam).  It helps him stay full all day even when he is fasting 16 long hours. So here is a simple, easy to make recipe that he prefers, while I like to have a variety by trying out different flavors like mango or peanut butter. 

Ingredients:

2 tbsp chia seeds

1 cup milk of choice (or water)

2 tbsp greek yogurt (or full fat yogurt)

¼ tsp vanilla extract

¼ tsp cinnamon powder

⅓ cup blueberries (frozen or fresh) for compote+ more for topping

squeeze of lemon juice (optional)

Crushed walnuts for topping (or homemade granola)

Method:

In a bowl mix chia seeds and milk (or water). Add vanilla extract and cinnamon powder. Mix well making sure all the seeds are fully immersed in the liquid. Cover and let it soak overnight or at least for 1-2 hours.

Make the blueberry compote by heating the blueberries with a splash of water and a squeeze of lemon juice. Heat until the water is evaporated and the blueberries look smashed ( you can also use a fork to smash the blueberries).

When ready to serve, add a layer of yogurt, blueberry compote, walnuts, and few blueberries. If it’s too thick you can always add some water or milk to get the desired consistency.

There you have it! Delicious, nutritious, and satisfying breakfast (or snack) that will keep you full for longer. Easy and convenient too as you can prep it the night before and is enough for two servings.

Note: Due to the high content of fiber in chia make sure you drink plenty of water to avoid constipation.
