Crispy Green Beans

In a recent post, I shared with you how one of my clients has been incorporating more greens into her diet. So, are you are wondering: “But I need to know some easy recipes to incorporate more greens!”or “How do I eat more greens when I am short on time?”. Then this green beans recipe is for you. It’s super easy, delicious, and can be done in about 10 minutes; perfect for those days when you are in a rush or not in the mood to cook something complicated.

And guess what?! There is an extra benefit; the beans are crispy and work perfectly as finger foods for after school/work snack time (with or without a dip)!

Ingredients:

1/2 lb whole green beans, fresh or frozen thawed

2-3 tsp coconut oil or grass-fed butter

1-2 tsp vinegar

crushed red pepper flakes to taste

1/2 tsp garlic powder (optional)

2 tbsp crumbled feta cheese (optional)

Salt and pepper to taste

Method:

Melt the coconut oil or butter in a skillet. Add the green beans, crushed red pepper flakes, and garlic powder. Saute for 1-2 minutes by stirring constantly. Add the vinegar, salt, and pepper. Cook further for 3-5 minutes or until desired crispiness is achieved. Remove from heat and serve with the feta cheese (optional) on top .

Don’t have green beans? I am sure you can substitute some other veggies like zucchini/courgette, peppers, broccoli, or brussel sprouts. Be creative and let me know if you try any other veggies.
