I was really craving the cranberry orange bread that we used to get at Costco in the US a few years ago, so I attempted to make it myself….but healthier of course! My recipe is adapted from this one, and although it’s not exactly the same as the one from Costco, it is a perfect healthy grain-free snack/breakfast.
1/2 cup of coconut flour
1/4 cup buckwheat flour
5 large eggs
1/2 cup fresh orange juice
2 tsp orange zest
1 tsp orange oil
1/2 cup pure maple syrup
1 tsp vanilla extract
1/4 tsp salt
1 tsp ground cinnamon
1/2 cup dried cranberries, chopped
1/4 cup coconut oil or butter, melted
1 tsp baking soda
Method:
Preheat oven to 350F/175C. In a medium bowl, mix together all the wet ingredients, then add in the flours. Using a whisk, mix to break all the lumps. Stir in the dried cranberries. Pour the batter in a loaf pan lined with parchment paper and bake in the oven for 25-30 minutes (or until a toothpick comes out clean). Allow the bread to cool in the pan for 5-10 min before removing to serve..
Note: please note my measuring tools are from the US, so please adjust accordingly if in different country.
