Granola for breakfast is so delicious and satisfying. Usually I go for my homemade chocolate granola but I wanted something non chocolatey and grain free. Since it’s winter, I decided to spice it up with gingerbread mix and topped it with dried fruits.
Ingredients:
1 cup almonds
1 cup walnuts
1/2 cup pecans
1/2 cup sunflower seeds
1 cup desiccated coconut
1/2 cup pumpkin seeds
1/8 teaspoon sea salt
1 or 2 tbsp gingerbread spice mix (or 2-3 tbsp ground ginger, 1 tbsp ground cinnamon, pinch of ground nutmeg and clove)
1 tbsp vanilla extract
3 tbsp coconut oil, melted
3 tbsp pure maple syrup
1/2 cup goji berries
1/2 cup unsweetened raisins
1/4 cup dates, finely chopped (optional)
Method:
In a food processor, chop the nuts coarsely and transfer into a big mixing bowl. Then roughly grind the seeds and add to the bowl of nuts.
Add in the melted coconut oil, maple syrup, vanilla extract, and the gingerbread spice mix to the nuts and seeds. Mix well. Spread the mixture evenly on a cookie sheet lined with parchment paper and bake in the oven at 170C/300F for 10 minutes. Remove from the oven, give it a stir and bake for another 10 minutes.
Let the granola cool completely and then add the goji berries, raisins, and dates (optional). Store in an airtight container and enjoy!
