Snack bars are convenient options when you need that extra boost of energy to hold you until the next meal. However, the ones on the supermarket shelves are often loaded with excess sugar, salt, and unnecessary additives and preservatives. When you make them at home, you can customize them so that you can ward off hunger as well as get a beneficial dose of all the nutrients from wholesome ingredients.
Ingredients:
1 cup almonds
1/2 cup dates
1/2 cup goji berries
1/2 cup raisins
pinch of nutmeg (optional)
cinnamon powder (to taste)
ginger powder (to taste)
Method:
In a food processor, coarsely grind the almonds. Than add in the dates, goji berries, raisins, nutmeg, cinnamon powder and ginger powder and process until the mixture is well combined (almost like a dough). Pour the mixture in a loaf pan lined with parchment paper. Spread it evenly and press it so that it sticks together.
Place the loaf pan in the fridge for 5 minutes. Then, lift the parchment paper to remove the dough out of the pan. Slice the dough into 8 full snack bars or 16 mini bars. Store them in a sealed container in the fridge and enjoy them at home or when on the move.
