Gluten Free Chicken And Broccoli Quinoa Casserole

When I feel lazy to cook I always look for ways I can just dump ingredients in a pan and put it in the oven. Casseroles are perfect for such days as they require less steps, less dishes and thus less cleaning afterwards. Win win situation, right? I have been making this casserole dish for some time now and my family loves this recipe. It’s super easy to put together that even my 16 year old daughter has made it a few times.

This is a casserole with chicken, broccoli, and quinoa, which is also gluten free and quick to make.

This recipe has been a lifesaver, especially when your teenager can help put it together (as long as I prepare the chicken for her first 🙂 )

I also like to make the casserole interesting by adding in some jalapenos or red pepper flakes to bring some kick to the dish. Also I like to use combination of cheddar and a bit of Parmesan cheese.

Gluten Free Chicken And Broccoli Quinoa Casserole

Ingredients
  

  • 2 cups broth chicken or vegetable broth
  • 1/2 cup milk or nut milk
  • 1 tsp adobo seasoning or any chicken seasoning
  • 1/2 cup Sorghum flour, or all purpose flour
  • 11/2 cups water, divided
  • 1 cup uncooked quinoa
  • 1 lb boneless chicken breast, cut in strips
  • 2 tsp Emeril's essence seasoning or other seasoning of choice
  • 1 tsp butter or coconut oil
  • 4 cups broccoli florets
  • 1 jalapeno, diced fresh or canned
  • 1/2 cup cheddar cheese, grated
  • salt and pepper to taste

Method
 

  • Preheat oven to 400°F. Generously grease a 9×13 baking dish.
    2. Cut the chicken in strips. In a skillet, melt some butter or coconut oil and place the chicken strips in the skillet. Add the adobo/chicken seasoning, mix well and saute the chicken for 5 minutes.
    3. In a saucepan, bring the broth to a boil and then turn off the heat. In another bowl, mix the milk, 1/2 cup water and the flour. Whisk it nicely to remove any lumps. Add this mixture to the boiled broth.
    4. Add the quinoa, essence seasoning, 1 cup water and salt+pepper to taste in the prepared baking dish. Now add in the broth mixture and mix well. Arrange the chicken strips and bake in the oven uncovered for 15-20 minutes.
    5. Remove from the oven, stir, and add in the broccoli florets. Add in additional water if needed. Bake in the oven for another 15-20 minutes.
    6. Add the grated cheese and cook again for 5-7 minutes or until the cheese has melted.
    Serve warm.

Notes

This recipe is so versatile. You can easily add any spices or other vegetables of your choice if you don’t have or like broccoli.
If you prefer, you can also mix everything in the greased baking dish, put in the oven, and bake (just put the cheese 5-7 minutes before the final cooking).

If you tried Quinoa before but didn’t really like it, then this dish will change that for you. I have also attempted this recipe with brown rice a few times but that requires playing around with the ratio of liquid depending on the type of rice.
